Want to be fancy without the fuss? Baked figs are so fancy but sooo easy!

What you need:

14-16 small to medium figs

Violife dairy free feta/cream cheese (1/4 package depending on the size of fig) cut into small chunks

Macadamia nuts ¼ cup chopped

Honey or maple syrup for drizzle

Sage (1 tsp)

Directions:

Cut a small x’s or + signs in the fig. Make sure not to cut all the way to the bottom otherwise the fig will split open and not look as pretty.

Stuff the figs with small chunks of Dairy Free (DF) feta or even DF cream cheese.

Sprinkle with chopped macadamia nuts or pistachios.

In a bowl sprinkle some sage and pinch with your fingers and lightly dust the tops.

Bake for 10 minutes or until the DF feta has melted and then drizzle a small spoon full of honey or maple syrup across the figs.

Let cool slightly and serve warm. Garnish with hemp hearts of shaved chocolate if you really want to get fancy.

It’s a great way to make a quick and fancy looking appie without the fuss.

Sick of banana bread and want to use up those rotten or freezer bananas in a hurry??? We all have good intentions but life catches up and boom! They are bad. I got you! 

I get my oats from @daybreak.mill  because they are not heated treated and are considered raw. They are organic and glysophate free. Great customer service too! Please go check out this awesome Saskatchewan company.

What you need:

3 cups freezer bananas. (Mix until smooth in the bowl and then add the rest. )
6 cups oatmeal
1 Tbsp cinnamon
1/2 Tbsp vanilla
4 eggs
1 cup coconut sugar or sweetener of choice. (Totally optional.)
1/2 tsp salt
1/2 tsp nutmeg
1 cup milk of choice. I used almond.
3 Tbsp coconut oil melted

Directions:

Incorporate all items into 1 bowl. Mix well.

Pour into a parchment paper-lined 12X16 pan (you can do a smaller pan but they will be thicker bars. So, do what works best for you and adjust cook time if they are thicker.)

Bake at 350F for 30-35 mins.

Check with a toothpick in the middle of the batter in the pan to see if the batter sticks to the toothpick. If it’s clean, you’re good.

Feel free to add nuts, seeds, and dried fruit. Go bananas!!! 

These bars are great for lunches for school for kids that always hungry.

What you need:

6-8 citrus peels washed and sliced.

1-2 cups of sugar

1/2-1 cup of water depending on the size of your pot and peels.

Candied Citrus peel is a fun way to use up your orange peels. I like grapefruit, oranges, lemons, and limes and need to venture out with more peels.

So here is a recipe of how to:

Take your peels and slice them thin in strips. Make sure they are soaked in a fruit wash prior to cutting and rinsed well ahead of time.

Boil in a ratio of 2:1 sugar to water just covering the peels.  

I use organic cane sugar from Day Break Mill for these but any sugar will work. Bring to boil, stir often, and let simmer on low for approx 1 1/2 hour. Stir regularly. 

When the water is thick like a syrup they are done. 

Pull them out carefully with some tongs and place on a sheet of parchments paper to cool. Once they are cooled, sprinkle either cane sugar or I really liked using powdered monk fruit by Lakanto! 

I have done it a few ways but I think the best way is to actually store them in a Tupperware container will a layer of the powdered sugar. Over time the peels harden even more because the powder soaks up the moisture but still remain gooey on the inside. 

Grapefruit is a bit tart/bitter but a nice mix with the sweet. So that’s my favourite way. 

Store at room temp for a week or in the fridge for a couple months. 

Citrus peels can be eaten as is or added to cakes, granola, charcuterie board, cocktail/ mocktail, trail mix, etc. If you have not tried, this is a great addition to garnish any summer meal.

Directions:

Dip the glass in lime juice and the rim in sugar or smoked pineapple sugar from Jenno’s Homestead

Add 2 large ice cubes

Juice from 1 large lime or 1/4 cup like juice

1 1/2 cups watermelon juice filtered after blending or you can store bought watermelon juice

2 squirts of @franksredhot hot sauce

1 Tbsp maple syrup

3 muddled mint leaves

Mix all its a stir stick.

Top with 1/4 cup carbonated water

If it’s not sweet enough for you, add more maple syrup. Sprinkle a little bit of the smoked pineapple sugar and some sliced jalapenos into the drink.

So this recipe will depend on the sweetness of your watermelon. If it’s really ripe then try this as is, if it’s not as ripe, add sweetener.

Feel free to spike it if you want a cocktail instead:)
